Ingredients

Scale
  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh chives
  • 2 hard-boiled eggs, chopped

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.
  2. Bring to a boil over medium-high heat and cook for 10-15 minutes, or until tender when pierced with a fork. Do not overcook.
  3. Drain the potatoes well and let them cool slightly in the colander.
  4. While the potatoes are cooling, prepare the dressing. In a large bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, Worcestershire sauce, salt, and pepper until smooth.
  5. Add the slightly cooled potatoes to the bowl with the dressing. Gently fold to coat the potatoes evenly.
  6. Stir in the chopped red onion, chives, and chopped hard-boiled eggs.
  7. Taste and adjust seasoning if needed.
  8. For best flavor, cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  9. Garnish with extra chives or a sprinkle of paprika before serving, if desired.

Notes

  • For a richer flavor, you can add a tablespoon of finely chopped celery for crunch.
  • If you prefer a tangier dressing, add a little more apple cider vinegar.
  • Ensure potatoes are only slightly cooled before mixing with the dressing to help them absorb the flavors.
