Whip up these delicious Almond Fig Granola Bars for a healthy homemade vegan snack or breakfast treat. They are perfect for a holiday gathering or any time you need a wholesome bite.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup slivered almonds
  • 1/4 cup dried figs, chopped
  • 2 tablespoons chia seeds
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine the rolled oats, slivered almonds, chopped dried figs, chia seeds, cinnamon, and salt. Stir well to mix.
  3. In a separate small bowl, whisk together the almond butter, maple syrup, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Mix until everything is evenly coated.
  5. Transfer the mixture to the prepared baking pan. Press it down firmly and evenly with a spatula or the back of a spoon.
  6. Bake for 20-25 minutes, or until the edges are lightly golden brown.
  7. Let the granola bars cool completely in the pan on a wire rack. This is important for them to set.
  8. Once cooled, lift the parchment paper to remove the bars from the pan. Cut into your desired bar size.

Notes

  • For a firmer bar, you can add an extra tablespoon of almond butter or a little more maple syrup.
  • Store the bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer storage.
  • Feel free to add other dried fruits like dates or apricots, or nuts like walnuts or pecans.
