Ingredients
Scale
2 1/2 cups almond flour
1/2 cup unsweetened applesauce
1/4 cup maple syrup
1/4 cup melted coconut oil
1 tablespoon molasses
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional: 1/4 cup sugar-free powdered sweetener for dusting
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, whisk together the almond flour, ground ginger, cinnamon, cloves, baking soda, and salt.
In a separate bowl, combine the unsweetened applesauce, maple syrup, melted coconut oil, and molasses.
Pour the wet ingredients into the dry ingredients and mix until a dough forms.
Roll the dough into 1-inch balls and place them on the prepared baking sheets. Flatten each cookie slightly with the palm of your hand or the bottom of a glass.
Bake for 10-12 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
If desired, dust with sugar-free powdered sweetener once cooled.
Notes
Ensure your almond flour is finely ground for the best cookie texture.
You can add a touch of blackstrap molasses for a deeper gingerbread flavor.
Store cookies in an airtight container at room temperature for up to 3 days.
