Ingredients
Scale
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup granulated sugar
1 large egg, lightly beaten
1/2 cup milk
1 teaspoon vanilla extract
2 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and diced small
Vegetable oil, for frying (if frying)
Cooking spray (if baking)
For the Glaze: 1 cup powdered sugar
2 tablespoons milk or apple cider
1/4 teaspoon ground cinnamon
Instructions
In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl, mix the granulated sugar, egg, milk, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. The batter will be thick.
Gently fold in the diced apples.
For Frying: Heat 2 inches of vegetable oil in a deep pot to 350°F (175°C). Drop batter by rounded tablespoons into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side until golden brown. Remove with a slotted spoon and drain on paper towels.
For Baking: Preheat your oven to 375°F (190°C). Spray a baking sheet or muffin tin lightly with cooking spray. Drop batter onto the prepared surface. Bake for 15-18 minutes, or until lightly golden.
Prepare the glaze: Whisk together the powdered sugar, milk (or cider), and cinnamon until smooth.
Dip or drizzle the warm fritters generously with the glaze. Serve warm.
Notes
Use firm, slightly tart apples for the best texture and flavor contrast.
If you prefer a thinner glaze, add milk one teaspoon at a time until the desired consistency is reached.
For extra crispy fried fritters, ensure your oil temperature is accurate before adding the batter.
