Make this creamy, satisfying Avocado and Chickpea Salad Sandwich for a quick, flavorful lunch. It is vegetarian and packed with good tastes.

Ingredients

Scale
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 ripe avocado
  • 2 tablespoons mayonnaise (or vegan mayo)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh cilantro or parsley
  • Salt to taste
  • Black pepper to taste
  • 4 slices whole wheat bread or your favorite sandwich bread
  • Optional additions: lettuce, tomato slices

Instructions

  1. Place the rinsed chickpeas in a medium bowl.
  2. Mash the chickpeas roughly with a fork or potato masher. You want some texture, not a smooth paste.
  3. In a separate small bowl, scoop out the avocado flesh and mash it until smooth.
  4. Add the mayonnaise, Dijon mustard, and lemon juice to the mashed avocado. Mix well until creamy.
  5. Combine the mashed avocado mixture with the mashed chickpeas. Stir gently.
  6. Fold in the chopped red onion and cilantro or parsley.
  7. Season the salad generously with salt and black pepper. Taste and adjust seasonings as needed.
  8. Divide the chickpea salad mixture evenly between two slices of bread.
  9. Top with lettuce or tomato if using, and place the remaining slices of bread on top.
  10. Slice the sandwiches in half and serve immediately for a fantastic lunch.

Notes

  • For a tangier flavor, substitute plain Greek yogurt for some of the mayonnaise.
  • If you prefer a smoother texture, use an immersion blender to pulse the chickpea mixture a few times.
  • You can swap out the red onion for finely chopped celery for added crunch.
  • This salad keeps well in the refrigerator for up to two days.
