Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/2 cup seeds (pumpkin, sunflower, or chia)
  • 1/4 cup unsweetened shredded coconut
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup melted coconut oil or other neutral oil
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, cinnamon, ginger, cardamom, cloves, nutmeg, and salt. Stir well to mix all the dry ingredients.
  3. In a separate small bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients. Stir until everything is evenly coated.
  5. Spread the granola mixture in a single layer on the prepared baking sheet.
  6. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  7. Let the granola cool completely on the baking sheet. It will become crunchy as it cools.
  8. Once cooled, break the granola into clusters. Store in an airtight container at room temperature.

Notes

  • Feel free to adjust the spices to your preference. Add more or less of any spice to create your perfect chai flavor.
  • You can substitute other nuts and seeds based on what you have available.
  • For sweeter granola, you can add a little more maple syrup or honey.
  • Ensure the granola is completely cool before breaking it into clusters for the best crunch.
