Make incredibly crispy, cheesy baked Parmesan zucchini rounds that are perfect as a healthy snack, appetizer, or quick weeknight side dish. This easy oven recipe delivers crunch without frying.

Ingredients

Scale
  • 3 medium zucchini
  • 1 large egg
  • 2 tablespoons milk (any kind)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated Parmesan cheese, divided
  • 1/4 cup panko breadcrumbs (for extra crisp)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper.
  2. Wash the zucchini and trim the ends. Slice the zucchini into rounds about 1/4 inch thick. Pat the slices very dry with paper towels; removing moisture helps them crisp up.
  3. Set up a dredging station with three shallow bowls. In the first bowl, whisk the egg and milk together.
  4. In the second bowl, combine the flour, salt, and pepper.
  5. In the third bowl, mix 3/4 cup of the Parmesan cheese, the panko breadcrumbs, and the garlic powder.
  6. Dip each zucchini round first into the flour mixture, shaking off any excess.
  7. Next, dip the floured round into the egg wash, letting excess drip off.
  8. Finally, press the zucchini firmly into the Parmesan-breadcrumb mixture, coating both sides well.
  9. Arrange the coated zucchini rounds in a single layer on the prepared baking sheets. Do not overlap them.
  10. Sprinkle the remaining 1/4 cup of Parmesan cheese evenly over the tops of the zucchini rounds.
  11. Bake for 12 to 15 minutes, flipping the rounds halfway through the cooking time, until they are golden brown and crispy.
  12. Serve immediately as a delicious, low-carb zucchini side dish or appetizer.

Notes

  • For the crispiest results, ensure your zucchini slices are thin and very dry before coating.
  • You can substitute almond flour for all-purpose flour to make this a keto friendly zucchini side.
  • If you prefer sticks over rounds, cut the zucchini lengthwise into spears instead of slicing them into coins.
