Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 lb mixed vegetables (broccoli florets, bell peppers, red onion), chopped
1/4 cup balsamic vinegar
3 tablespoons olive oil
2 tablespoons honey or maple syrup
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the balsamic vinegar, olive oil, honey or maple syrup, Dijon mustard, minced garlic, Italian seasoning, salt, and pepper. This creates your glaze.
Place the chicken pieces and chopped vegetables into a large bowl.
Pour about two-thirds of the balsamic glaze over the chicken and veggies. Toss everything well until it is evenly coated.
Spread the coated chicken and vegetables in a single layer on the prepared baking sheet. Do not overcrowd the pan.
Roast for 15 minutes.
Remove the pan from the oven. Drizzle the remaining one-third of the glaze over the chicken and vegetables. Gently toss them on the pan.
Return the pan to the oven and roast for another 5 to 10 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender and slightly caramelized.
Serve immediately and enjoy your simple, delicious meal.
Notes
You can substitute chicken with firm tofu for a vegetarian option.
Use any sturdy vegetables you have on hand, such as zucchini, carrots, or potatoes. Cut larger vegetables smaller so they cook at the same rate as the chicken.
For extra flavor, add a sprinkle of fresh parsley just before serving.
