Ingredients

Scale
  • 1 ripe banana, mashed
  • 1/2 cup unsweetened applesauce or finely grated apple
  • 1/2 cup rolled oats, blended into flour
  • 1 scoop vanilla or unflavored protein powder
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon (for batter)
  • Pinch of salt
  • Cooking spray or oil
  • Extra cinnamon, for topping

Instructions

  1. Combine the mashed banana, applesauce, eggs, and protein powder in a bowl. Whisk until smooth.
  2. In a separate bowl, mix the oat flour, baking powder, cinnamon, and salt.
  3. Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface.
  5. Pour about 1/4 cup of batter per pancake onto the hot surface. Cook for 2-3 minutes per side, until bubbles form and the edges look set.
  6. Flip carefully and cook the second side until golden brown.
  7. Serve immediately, topped with extra cinnamon.

Notes

  • You can substitute oat flour with all-purpose or whole wheat flour if preferred.
  • For a thinner batter, add a splash of milk or water.
  • Adjust protein powder flavor based on your preference.
  • Chop the apple very finely if you prefer no chunks in the final pancake.
