Make sweet rolls that combine the moist texture of banana bread with a classic cinnamon swirl filling. This recipe uses a simple dough to create rich, banana-flavored sweet rolls.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • For the Filling: 1/2 cup softened butter
  • 1 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup mashed ripe bananas
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time.
  3. Mix in the mashed bananas and vanilla extract. Gradually add the flour mixture alternately with the milk, mixing until just combined. Do not overmix.
  4. On a lightly floured surface, roll the dough into a large rectangle, about 12×18 inches.
  5. For the filling, mix the 1/2 cup softened butter, 1 cup brown sugar, cinnamon, and 1/4 cup mashed bananas until smooth. Spread this mixture evenly over the dough rectangle.
  6. Starting from the long edge, tightly roll the dough into a log. Pinch the seam closed.
  7. Cut the log into 12 equal rolls. Place the rolls cut-side up in a greased 9×13 inch baking pan.
  8. Cover the pan and let the rolls rest in a warm place for 30 minutes. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  9. Bake for 20 to 25 minutes, or until the tops are golden brown.
  10. While the rolls bake, whisk together the powdered sugar, 2 tablespoons milk, and vanilla extract for the glaze.
  11. Remove the rolls from the oven and immediately drizzle the glaze over the warm rolls. Serve warm.

Notes

  • Use very ripe, spotty bananas for the best flavor and moisture in both the dough and the filling.
  • If the dough is too sticky to handle, chill it for 15 minutes before rolling it out.
  • For a slightly sticky bottom, you can place a thin layer of melted butter and brown sugar mixture in the bottom of the pan before adding the rolls.
