Ingredients

Scale
  • 1 and 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1 and 1/2 cups milk
  • 1/2 cup melted butter, plus more for greasing
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • For the Honey Butter:
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the mashed bananas, eggs, milk, melted butter, granulated sugar, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Lightly grease your waffle iron with butter. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron, spreading it evenly.
  6. Cook until golden brown and crispy, following your waffle iron’s guidelines.
  7. While the waffles are cooking, prepare the honey butter. In a small bowl, cream together the softened butter, honey, and cinnamon until smooth.
  8. Serve the warm banana bread waffles immediately, topped with a generous dollop of honey butter.

Notes

  • Ensure your bananas are very ripe for the best flavor and sweetness.
  • You can add chopped walnuts or pecans to the batter for extra texture.
  • For a richer flavor, use buttermilk instead of regular milk.
  • Adjust the amount of cinnamon and nutmeg to your preference.
