Make this classic New Orleans dessert, Bananas Foster, right in your kitchen. You will caramelize bananas in a rich, buttery rum sauce and serve it warm over vanilla ice cream for an indulgent, quick treat.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup dark rum (like Myers’s or Gosling’s)
  • 1/2 teaspoon ground cinnamon
  • 4 firm, ripe bananas, peeled and sliced lengthwise
  • 1/4 cup banana liqueur (optional, for deeper flavor)
  • Vanilla ice cream, for serving

Instructions

  1. Place the butter in a large, heavy-bottomed skillet over medium heat. Let the butter melt completely.
  2. Add the brown sugar and cinnamon to the melted butter. Stir constantly until the sugar dissolves and the mixture forms a smooth syrup, about 2 minutes. Do not let it burn.
  3. Add the sliced bananas to the skillet in a single layer. Cook for about 1 minute per side until they are lightly softened and coated in the sauce.
  4. Remove the skillet from the heat source temporarily. Carefully pour the dark rum into the skillet.
  5. Return the skillet to the heat. Immediately tilt the pan slightly toward the flame (if using a gas stove) or use a long match to ignite the rum vapors. Stand back.
  6. Allow the flames to die down naturally. This process burns off the alcohol and leaves the rich rum flavor. This is the flambé step.
  7. Stir in the banana liqueur, if using, just until combined.
  8. Serve the warm bananas and sauce immediately over scoops of cold vanilla ice cream. This is a dessert over ice cream that you must try tonight.

Notes

  • Use firm, slightly under-ripe bananas; very soft bananas will turn mushy when cooked.
  • If you prefer not to flambé, simply simmer the sauce for 1 minute after adding the rum until it thickens slightly, then serve.
  • For a non-alcoholic version, substitute the rum with 1/4 cup of strong brewed coffee or extra banana juice.
  • This recipe is a copycat of the famous Brennan’s restaurant dessert.
