Create quick, tasty vegetarian pizzas using flatbreads topped with flavorful BBQ chickpeas, fresh veggies, and melted cheese. This recipe is perfect for a fast weeknight dinner.

Ingredients

Scale
  • 4 Naan or Flatbreads
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup BBQ sauce
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup bell pepper (any color), thinly sliced
  • 1/2 cup shredded mozzarella cheese (or cheese of choice)
  • 1 tablespoon olive oil
  • Optional: Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a medium bowl, toss the rinsed and drained chickpeas with the BBQ sauce until they are fully coated.
  3. Heat the olive oil in a skillet over medium heat. Add the BBQ chickpeas and cook for about 5 minutes, stirring occasionally, until they are slightly caramelized. Remove from heat.
  4. Place the flatbreads on a baking sheet.
  5. Spread the BBQ chickpeas evenly over the surface of each flatbread.
  6. Scatter the sliced red onion and bell pepper over the chickpeas.
  7. Top everything with the shredded cheese.
  8. Bake for 8 to 10 minutes, or until the cheese is melted and bubbly and the edges of the flatbread are crisp.
  9. Remove from the oven. Garnish with fresh cilantro, if using. Slice and serve immediately.

Notes

  • You can use any flatbread you have on hand, like pita or pre-made pizza crusts.
  • Adjust the amount of BBQ sauce based on your preference for sweetness and tang.
  • For extra flavor, you can add a sprinkle of garlic powder to the chickpeas before saucing them.
  • Feel free to add other favorite vegetable toppings like mushrooms or jalapeños.
