Ingredients

Scale
  • 2 cans (20 ounces each) young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup your favorite BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 4-6 hamburger buns
  • Optional toppings: coleslaw, pickles, sliced jalapeños

Instructions

  1. Prepare the jackfruit: Drain and rinse the jackfruit. Trim away any tough core pieces and shred the jackfruit with two forks or your fingers to resemble pulled meat.
  2. Sauté aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Cook the jackfruit: Add the shredded jackfruit to the skillet. Cook for 5-7 minutes, stirring occasionally, until it starts to brown slightly.
  4. Simmer in BBQ sauce: Stir in the BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, and chili powder. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20-30 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the sauce. Season with salt and pepper to taste.
  5. Toast the buns: While the jackfruit simmers, lightly toast your hamburger buns.
  6. Assemble the sandwiches: Spoon a generous amount of the BBQ pulled jackfruit onto the bottom half of each bun. Add your desired toppings like coleslaw, pickles, or jalapeños. Top with the other half of the bun.
  7. Serve immediately.

Notes

  • Ensure you buy young green jackfruit in brine or water, not ripe jackfruit in syrup, as the texture and flavor are essential for this recipe.
  • Adjust the sweetness and spice of the BBQ sauce to your preference.
  • For a smoky flavor, you can add a pinch of liquid smoke to the jackfruit mixture.
