Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/4 cup beef broth
  • 1/4 cup chopped fresh cilantro
  • 2 sheets refrigerated pie crusts
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Add the ground beef to the skillet. Break it up with a spoon and cook until browned. Drain off any excess grease.
  5. Stir in the cumin, chili powder, paprika, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute, stirring constantly.
  6. Pour in the beef broth and bring to a simmer. Cook for 5-7 minutes, or until the liquid has mostly evaporated and the mixture has thickened.
  7. Remove the skillet from heat and stir in the chopped cilantro. Let the filling cool slightly.
  8. Unroll the pie crusts. Using a 4-inch round cutter, cut out circles from each crust. You should get about 8-10 circles per crust.
  9. Place about 2 tablespoons of the beef filling onto one half of each circle, leaving a small border.
  10. Moisten the edges of the dough with water. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork.
  11. Place the empanadas on the prepared baking sheet.
  12. Brush the tops of the empanadas with the beaten egg wash. Cut a small slit in the top of each to allow steam to escape.
  13. Bake for 18-22 minutes, or until golden brown and heated through.
  14. Let cool slightly before serving.

Notes

  • You can make the filling ahead of time and refrigerate it until ready to assemble the empanadas.
  • Feel free to add other vegetables to the filling, such as diced bell peppers or corn.
  • For a spicier kick, increase the amount of cayenne pepper or add a pinch of red pepper flakes.
