Create a delicious, protein-rich Berry Quinoa Pudding Parfait. This recipe layers creamy quinoa pudding with a bright berry compote for a satisfying breakfast or sweet treat.

Ingredients

Scale
  • 1 cup Quinoa, rinsed
  • 2 cups Water or Milk (dairy or non-dairy)
  • 1/4 cup Maple Syrup (or sweetener of choice)
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon
  • 1 cup Mixed Berries (fresh or frozen)
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Sugar (optional, for compote)
  • Yogurt or Whipped Cream (for layering, optional)

Instructions

  1. Rinse the quinoa well under cold water.
  2. Combine quinoa and water or milk in a saucepan.
  3. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all liquid is absorbed and quinoa is fluffy.
  4. Stir in maple syrup, vanilla extract, and cinnamon into the cooked quinoa. Let it cool slightly to form the pudding base.
  5. While the quinoa cooks, prepare the berry compote: Combine berries, lemon juice, and optional sugar in a small saucepan.
  6. Cook the berries over medium heat for 5-7 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly. Let cool.
  7. To assemble the parfait, layer the ingredients in a glass: start with a layer of quinoa pudding.
  8. Top the pudding with a layer of the cooled berry compote.
  9. Repeat the layers: pudding, then berries.
  10. Finish with a dollop of yogurt or whipped cream, if using. Serve immediately or chill for later.

Notes

  • You can prepare the quinoa pudding ahead of time and store it in the refrigerator.
  • Use any combination of berries you enjoy, such as strawberries, blueberries, or raspberries.
  • For extra texture, sprinkle toasted nuts or seeds between the layers.
  • Adjust sweetness to your preference in both the pudding and the compote.
