Ingredients
Scale
1 tablespoon vegetable oil
1 medium yellow onion, chopped
1 pound ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup water
1/4 cup ketchup
2 tablespoons yellow mustard
1 tablespoon sweet pickle relish
1 teaspoon white vinegar
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 cup mayonnaise
2 tablespoons sweet pickle relish (for sauce)
1 tablespoon finely minced dill pickle
1 teaspoon yellow mustard (for sauce)
1/2 teaspoon white vinegar (for sauce)
1/4 teaspoon paprika (for sauce)
8 hamburger buns, preferably sesame seed
1 cup shredded iceberg lettuce
1/2 cup dill pickle slices
Instructions
Prepare the Special Sauce: In a small bowl, combine the mayonnaise, 2 tablespoons sweet pickle relish, minced dill pickle, 1 teaspoon mustard, 1/2 teaspoon vinegar, and 1/4 teaspoon paprika. Mix well. Set aside in the refrigerator.
Cook Aromatics: Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Brown the Beef: Add the ground beef, salt, and pepper to the skillet. Cook, breaking the meat apart with a spoon, until fully browned. Drain off any excess grease.
Simmer the Sauce Base: Stir in the water, ketchup, 2 tablespoons mustard, 1 tablespoon sweet pickle relish, 1 teaspoon vinegar, paprika, garlic powder, and onion powder into the beef mixture. Bring to a simmer.
Thicken: Reduce the heat to low and let the mixture cook uncovered for 10 minutes, stirring occasionally, until the sauce thickens slightly.
Toast Buns: Lightly toast the cut sides of the sesame seed buns.
Assemble: Spoon the sloppy joe mixture onto the bottom half of each bun. Top the meat with shredded lettuce, a few dill pickle slices, and a generous drizzle of the homemade special sauce. Place the top bun on the sandwich.
Notes
For a quicker sauce, use store-bought Thousand Island dressing instead of making the special sauce from scratch.
You can toast the buns in the same skillet used for the meat after draining the grease.
Shred the lettuce finely for a texture closer to the original sandwich.
