Ingredients
Scale
1 pound broccoli florets
1 medium butternut squash, peeled, seeded, and cubed
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon nutmeg
2 cups shredded cheddar cheese
1/2 cup breadcrumbs
Instructions
Preheat your oven to 375°F (190°C).
Steam or blanch broccoli florets until tender-crisp. Drain and set aside.
In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
Gradually whisk in milk until smooth. Cook, stirring, until the sauce thickens.
Stir in salt, pepper, and nutmeg.
Remove from heat and stir in cheddar cheese until melted.
Add the cooked broccoli and cubed butternut squash to the cheese sauce. Stir to combine.
Pour the mixture into a greased 9×13 inch baking dish.
Sprinkle breadcrumbs evenly over the top.
Bake for 25-30 minutes, or until bubbly and golden brown.
Let stand for 5 minutes before serving.
Notes
For a creamier sauce, use half-and-half instead of milk.
Add cooked chicken or ham for a heartier meal.
You can substitute sweet potatoes for butternut squash if preferred.
