This is a hearty, budget-friendly black bean chili. It uses simple ingredients and spices to create a filling vegan meal that helps stretch your dinner budget.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can tomato sauce
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and bell pepper. Cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic, chili powder, cumin, and oregano. Cook for 1 minute until fragrant.
  4. Add the rinsed black beans, diced tomatoes (with juice), tomato sauce, and vegetable broth to the pot.
  5. If using, stir in the cayenne pepper.
  6. Bring the chili to a simmer. Reduce the heat to low, cover partially, and let it cook for at least 20 minutes, stirring occasionally. This allows the flavors to blend.
  7. Taste the chili and season with salt and pepper as needed.
  8. Serve hot.

Notes

  • For a thicker chili, mash about 1/4 cup of the beans against the side of the pot before simmering.
  • This chili tastes even better the next day.
  • Feel free to add other budget-friendly vegetables like corn or carrots.
