Enjoy a spicy, creamy, and flavorful Buffalo Cauliflower Soup. This vegan recipe gives you the classic buffalo wing taste in a comforting, healthy soup perfect for game day.

Ingredients

Scale
  • 1 large head of cauliflower, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup raw cashews, soaked in hot water for 30 minutes
  • 1/4 cup hot sauce (like Frank’s RedHot)
  • 2 tablespoons nutritional yeast
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until soft, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add chopped cauliflower and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until cauliflower is very tender, about 15-20 minutes.
  4. Drain the soaked cashews.
  5. Carefully transfer the soup mixture to a high-speed blender. Add the drained cashews, hot sauce, nutritional yeast, apple cider vinegar, smoked paprika, salt, and pepper.
  6. Blend on high until completely smooth and creamy. If the soup is too thick, add a splash more broth or water until you reach your desired consistency.
  7. Return the soup to the pot and heat through gently if needed. Taste and adjust seasoning.
  8. Serve hot.

Notes

  • For extra heat, increase the amount of hot sauce.
  • Garnish with fresh chives or a drizzle of vegan ranch for serving.
  • Ensure your cashews are fully softened for the creamiest texture.
