Follow these steps to prepare and grill salmon fillets coated in a homemade Cajun spice rub for a flavorful, slightly spicy, and smoky dinner.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 2 tablespoons olive oil
  • For the Cajun Rub:
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper (adjust to your heat preference)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare the Cajun Rub: In a small bowl, combine the paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and black pepper. Mix well.
  2. Prepare the Salmon: Pat the salmon fillets dry with paper towels. Brush both sides lightly with olive oil.
  3. Season the Salmon: Sprinkle the Cajun rub evenly over all sides of the salmon fillets, pressing gently so the spices adhere.
  4. Preheat the Grill: Preheat your gas or charcoal grill to medium-high heat (about 400 degrees Fahrenheit). Clean the grates well.
  5. Prevent Sticking: Lightly oil the clean, hot grill grates by folding a paper towel, dipping it in oil, and using tongs to rub the grates just before placing the fish down.
  6. Grill the Salmon: Place the salmon fillets skin-side down (if using skin-on) directly over the heat. Close the grill lid.
  7. Cook Time: Grill for 4 to 6 minutes per side, depending on the thickness of the fillet. Avoid moving the fish during the first few minutes to allow a crust to form.
  8. Check Doneness: The salmon is done when it flakes easily with a fork and the internal temperature reaches 145 degrees Fahrenheit. The center should look opaque.
  9. Serve: Remove the salmon from the grill and let it rest for 2 minutes before serving with your choice of sides.

Notes

  • For cedar plank grilling, soak the plank in water for at least 2 hours before use. Place the seasoned salmon on the soaked plank and cook over indirect heat until done.
  • If you prefer less spice, reduce the cayenne pepper to 1/2 teaspoon.
  • Pair this salmon well with grilled asparagus or a simple serving of white rice.
