Learn the best way to cook onions sweet by mastering the technique for perfect caramelized onions. This guide shows you how to create a deep flavor onion topping that works for dips, pasta, and burgers.

Ingredients

Scale
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated sugar (optional, for faster browning)
  • 2 tablespoons water (for deglazing)

Instructions

  1. Prepare the Onions: Peel and slice the onions thinly and uniformly. Uniform slices help them cook evenly.
  2. Start the Heat: Place a large, heavy-bottomed skillet over medium-low heat. Add the butter and olive oil. Wait until the butter melts and coats the pan.
  3. Initial Cook: Add all the sliced onions and the kosher salt to the skillet. Stir well to coat the onions completely with the fat.
  4. Low and Slow Cooking: Cook the onions, stirring every 5 to 7 minutes. Keep the heat low to prevent burning. The goal is to slowly draw out the moisture and sugars. This initial stage takes about 15 to 20 minutes until the onions soften significantly and turn translucent.
  5. Introduce Sugar (Optional): If you want to speed up the caramelization slightly, sprinkle the teaspoon of sugar over the onions after they have softened. Stir it in.
  6. Deep Browning: Continue cooking, stirring more frequently now (every 3 to 5 minutes). The onions will start to stick to the bottom of the pan; this is good. This fond is where the deep flavor develops.
  7. Deglaze: When a dark brown layer forms on the bottom of the pan, add 1 tablespoon of water. Scrape the bottom of the pan with a wooden spoon to lift the browned bits (this is deglazing). Stir the onions until the liquid evaporates. Repeat this process with the second tablespoon of water if needed.
  8. Finish: Cook until the onions are deep golden brown, jammy, and significantly reduced in volume, about 35 to 45 minutes total cooking time.
  9. Use Immediately: Use these sweet onion topping onions immediately in your favorite recipes, like French onion pasta sauce or as an onion topping for burgers.

Notes

  • For a vegan caramelized onion recipe, substitute the butter with an equal amount of coconut oil or use only olive oil.
  • If you are making a large batch for later use (like homemade onion jam), you can cook them slightly longer until they are very dark brown.
  • If your onions start burning before they brown, reduce the heat immediately and add a splash of water or broth to scrape up the fond.
