Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 4 cups cauliflower florets, riced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 2 green onions, sliced

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add onion and cook until softened, about 3-5 minutes.
  3. Stir in garlic, carrots, and celery. Cook for another 5 minutes until vegetables are tender-crisp.
  4. Add the riced cauliflower, frozen peas, and frozen corn. Stir well to combine.
  5. Pour in soy sauce, sesame oil, and ginger. Season with black pepper.
  6. Cook, stirring frequently, for 5-7 minutes, or until the cauliflower is tender and any excess moisture has evaporated.
  7. Push the cauliflower mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until cooked through.
  8. Stir the scrambled eggs into the cauliflower mixture.
  9. Garnish with sliced green onions before serving.

Notes

  • For best results, use pre-riced cauliflower or make your own by pulsing cauliflower florets in a food processor until they resemble rice grains.
  • Adjust soy sauce or tamari to your taste.
  • Feel free to add other vegetables like bell peppers or broccoli.
