A straightforward recipe for baking thick-cut cauliflower steaks until tender with savory seasoning.

Ingredients

Scale
  • 1 large head cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Line a baking sheet with parchment paper.
  2. Remove the outer leaves from the cauliflower head and trim the stem so the head sits flat.
  3. Carefully slice the cauliflower head vertically into two or three thick steaks, about 1 inch thick each. Keep the core intact to hold the steak together.
  4. In a small bowl, mix the olive oil, smoked paprika, garlic powder, thyme, salt, and pepper.
  5. Brush both sides of each cauliflower steak generously with the oil and spice mixture.
  6. Place the seasoned steaks on the prepared baking sheet.
  7. Bake for 20 to 25 minutes, flipping the steaks halfway through the cooking time. The steaks should be tender when pierced with a fork and slightly browned on the edges.
  8. Remove from the oven and serve immediately.

Notes

  • For a crispier exterior, you can broil the steaks for the last 1-2 minutes, watching closely to prevent burning.
  • If your cauliflower is very large, you may need to increase the baking time by 5 minutes.
  • Serve these steaks with a squeeze of fresh lemon juice or a drizzle of tahini sauce for added flavor.
