A fresh and flavorful take on tabbouleh, this cauliflower version is perfect for low-carb and keto diets. You’ll pulse cauliflower into a rice-like texture and combine it with traditional herbs and vegetables for a vibrant dish.

Ingredients

Scale
  • 1 medium head cauliflower
  • 1 cup finely chopped fresh parsley
  • 1/2 cup finely chopped fresh mint
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and dry the cauliflower. Remove the leaves and tough core. Cut the cauliflower into florets.
  2. Place the cauliflower florets in a food processor. Pulse until the cauliflower resembles rice grains. Do this in batches if necessary.
  3. Transfer the cauliflower rice to a large bowl.
  4. Add the chopped parsley, mint, tomatoes, and red onion to the bowl.
  5. In a small bowl, whisk together the olive oil and lemon juice.
  6. Pour the dressing over the cauliflower mixture.
  7. Season with salt and black pepper.
  8. Toss everything together gently until well combined.
  9. Taste and adjust seasoning if needed.
  10. Serve immediately or chill for later.

Notes

  • For a finer texture, pulse the cauliflower for a bit longer.
  • You can prepare the cauliflower rice a day in advance and store it in an airtight container in the refrigerator.
  • Add other vegetables like cucumber or bell peppers for extra crunch and flavor.
