Ingredients
Scale
4 ears of corn, husked and cleaned
2 tablespoons olive oil or melted butter
Salt and pepper to taste
Optional toppings: mayonnaise, cotija cheese, chili powder, lime wedges, cilantro
Instructions
Preheat your grill to high heat or your broiler to high.
Brush the corn evenly with olive oil or melted butter. Season with salt and pepper.
For direct flame: Place the corn directly on the hot grill grates. Turn frequently until all sides are charred and kernels are tender, about 8-10 minutes.
For broiler: Place the corn on a baking sheet. Broil on high, turning every 2-3 minutes, until charred and tender, about 10-15 minutes. Watch closely to prevent burning.
Once charred, remove the corn from the heat.
If desired, spread mayonnaise on the corn.
Sprinkle with cotija cheese, chili powder, and chopped cilantro.
Serve immediately with lime wedges.
Notes
You can also use a cast-iron skillet over high heat for charring.
Adjust charring time based on your preference for smokiness.
