Make quick and satisfying cheddar eggs quesadillas using simple ingredients. This recipe is perfect for a fast breakfast, brunch, or light meal.

Ingredients

Scale
  • 2 large eggs
  • 1 tablespoon milk or water
  • Salt and black pepper to taste
  • 1/2 cup shredded sharp cheddar cheese
  • 2 medium flour tortillas (8-inch)
  • 1 teaspoon butter or cooking spray

Instructions

  1. In a small bowl, whisk the eggs with milk or water, salt, and pepper until combined.
  2. Heat a non-stick skillet over medium heat. Add butter or spray with cooking spray.
  3. Pour the egg mixture into the hot skillet. Cook, stirring gently, until the eggs are mostly set but still slightly moist. This creates fluffy scrambled eggs.
  4. Remove the eggs from the heat.
  5. Place one tortilla in a clean, dry skillet over low heat. Sprinkle half of the cheddar cheese over the tortilla.
  6. Spoon half of the cooked eggs evenly over the cheese.
  7. Top with the second tortilla.
  8. Cook for 2 to 3 minutes until the bottom tortilla is lightly browned and the cheese begins to melt.
  9. Carefully flip the quesadilla. Cook for another 2 to 3 minutes until the second side is golden brown and the cheese is fully melted.
  10. Remove from the skillet, slice in half, and repeat with the remaining ingredients.

Notes

  • For extra flavor, add a pinch of garlic powder or a dash of hot sauce to the eggs before scrambling.
  • You can assemble these ahead of time by preparing the eggs and layering the ingredients, then cooking when ready to eat.
  • Use medium-low heat when cooking the quesadilla to allow the cheese to melt completely before the tortillas burn.
