These cheddar stuffed pretzel bites are a fun and easy snack. They are perfect for game day or any gathering. The warm, gooey cheese inside a soft pretzel is a crowd-pleaser. Serve them with a creamy beer cheese dip for an extra layer of flavor.

Ingredients

Scale
  • 1 tube (13.8 ounces) refrigerated biscuit dough
  • 4 ounces cheddar cheese, cut into 1-inch cubes
  • 1 tablespoon butter, melted
  • 1 teaspoon coarse salt
  • For the Beer Cheese Dip:
  • 1 cup shredded cheddar cheese
  • 1/2 cup beer (lager or ale recommended)
  • 1/4 cup milk
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • 1/4 teaspoon garlic powder
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unroll the biscuit dough and cut each biscuit in half.
  3. Flatten each half into a small disc. Place a cube of cheddar cheese in the center of half the discs.
  4. Cover the cheese with the remaining biscuit dough discs, pinching the edges firmly to seal.
  5. Gently roll each stuffed biscuit into a ball.
  6. Arrange the balls on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until golden brown.
  8. While the pretzel bites are baking, prepare the beer cheese dip. In a small saucepan, melt 1 tablespoon of butter over medium heat.
  9. Whisk in the flour and cook for 1 minute, stirring constantly.
  10. Gradually whisk in the beer and milk until smooth.
  11. Bring to a simmer, stirring, until the sauce thickens.
  12. Stir in the shredded cheddar cheese, garlic powder, and pepper until the cheese is melted and the sauce is smooth.
  13. Once the pretzel bites are baked, brush them with melted butter and sprinkle with coarse salt.
  14. Serve the warm pretzel bites immediately with the beer cheese dip.

Notes

  • You can use any type of cheese that melts well, such as Monterey Jack or a cheese blend.
  • For a spicier dip, add a pinch of cayenne pepper.
  • If you don’t have beer, you can substitute with chicken or vegetable broth for the dip.
