Ingredients
Scale
1 tablespoon olive oil
1.5 pounds potatoes, diced into 1/2 inch pieces
1 pound ground beef
1 packet (1 ounce) taco seasoning mix
1/2 cup water
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro (optional)
Instructions
Heat the olive oil in a large, oven-safe skillet over medium-high heat.
Add the diced potatoes to the skillet and cook, stirring occasionally, for 8 to 10 minutes until they start to brown and soften slightly.
Push the potatoes to one side of the skillet. Add the ground beef to the empty side and cook, breaking it up with a spoon, until it is fully browned. Drain any excess grease.
Stir the taco seasoning mix and water into the ground beef mixture. Bring to a simmer and cook for 2 minutes, allowing the sauce to thicken slightly.
Stir the seasoned beef mixture together with the potatoes.
Sprinkle both the cheddar and Monterey Jack cheeses evenly over the top of the potato and beef mixture.
Place the skillet under a preheated broiler for 2 to 4 minutes, watching closely, until the cheese is fully melted and bubbly.
Remove from the oven, sprinkle with cilantro if you use it, and serve directly from the skillet.
Notes
You can use pre-cooked or leftover potatoes to reduce the initial cooking time.
For a spicier dish, add 1/4 teaspoon of cayenne pepper with the taco seasoning.
If you do not have an oven-safe skillet, transfer the mixture to a baking dish before adding the cheese and broiling.
