Bake this comforting Cherry Almond Oatmeal Crisp for a warm, satisfying breakfast or a sweet dessert. It features a bright cherry filling topped with a crunchy almond oat crumble.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup sliced almonds, plus 2 tablespoons for topping
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 2 cups fresh or frozen pitted cherries (if frozen, do not thaw)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the rolled oats, flour, brown sugar, 1/2 cup sliced almonds, cinnamon, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside half of this mixture for the topping.
  4. In a separate bowl, gently toss the cherries with cornstarch, lemon juice, and almond extract.
  5. Spread the cherry mixture evenly into the prepared baking dish.
  6. Sprinkle the reserved oat mixture evenly over the cherries. Top with the remaining 2 tablespoons of sliced almonds.
  7. Bake for 30 to 35 minutes, or until the topping is golden brown and the cherry filling is bubbly.
  8. Let the crisp cool for at least 15 minutes before serving. Enjoy warm.

Notes

  • This crisp tastes wonderful served with a scoop of vanilla ice cream or a dollop of Greek yogurt.
  • If you prefer a richer flavor, substitute half the oats with quick-cooking oats.
  • For extra crunch, toast the almonds lightly before adding them to the topping mixture.
