Ingredients
Scale
2 cups cooked, shredded chicken
1 can (10.5 ounces) cream of chicken soup
1/2 cup milk
1/2 cup chicken broth
1/2 cup frozen mixed vegetables (peas and carrots)
1/4 teaspoon black pepper
1/4 teaspoon dried thyme
1 cup biscuit or dumpling mix (like Bisquick)
1/2 cup milk (for dumplings)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the shredded chicken, cream of chicken soup, 1/2 cup milk, chicken broth, frozen vegetables, pepper, and thyme. Mix well.
Pour the chicken mixture evenly into your prepared baking dish.
In a separate small bowl, whisk together the biscuit mix and the 1/2 cup milk for the dumplings until just combined into a thick batter. Do not overmix.
Drop spoonfuls of the dumpling batter over the top of the chicken mixture. Space them out evenly.
Bake for 25 to 30 minutes, or until the dumplings are golden brown and cooked through and the filling is bubbly.
Let the casserole cool for a few minutes before serving. Enjoy your homemade comfort meal!
Notes
You can use leftover rotisserie chicken to save time.
For extra flavor, add a dash of onion powder to the filling mixture.
If your dumplings look too dry after 20 minutes, you can lightly tent the dish with foil.
