Make this easy and satisfying chicken noodle casserole for a comforting family dinner. It uses rotisserie chicken for speed and features a creamy sauce with an optional crunchy topping.

Ingredients

Scale
  • 12 ounces egg noodles
  • 3 cups cooked, shredded chicken (use rotisserie chicken for ease)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup chicken broth
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas and carrots, thawed
  • 1 cup shredded cheddar cheese
  • For Topping (Optional): 1/2 cup crushed butter crackers (like Ritz) mixed with 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the egg noodles according to package directions until al dente. Drain well and set aside.
  3. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, sour cream, milk, chicken broth, onion powder, garlic powder, and pepper. Mix until smooth.
  4. Stir in the shredded chicken, thawed peas and carrots, and half of the shredded cheddar cheese into the soup mixture.
  5. Gently fold in the cooked egg noodles until everything is evenly coated.
  6. Pour the mixture into the prepared baking dish.
  7. Sprinkle the remaining cheddar cheese over the top. If using the topping, sprinkle the cracker mixture evenly over the cheese layer.
  8. Bake for 25 to 30 minutes, or until the casserole is bubbly throughout and the topping is golden brown, if used.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • For a scratch-made sauce, substitute the canned soups with 1/2 cup butter, 1/2 cup flour, 2 cups chicken broth, and 1 cup heavy cream, cooked until thickened before adding seasonings.
  • You can prepare this casserole completely, cover it, and refrigerate it for up to 24 hours. Add about 10 minutes to the baking time if baking directly from the refrigerator.
  • Use any combination of cheese you prefer, such as Monterey Jack or Gruyere, for a different flavor profile.
