Make this comforting, smoky soup featuring roasted poblano peppers, shredded chicken, and black beans. It is a quick, creamy meal suitable for weeknights.

Ingredients

Scale
  • 2 large poblano peppers
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups cooked, shredded chicken breast
  • 1/2 cup heavy cream
  • 1/2 cup shredded Monterey Jack cheese (optional)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Roast the poblano peppers directly over a gas flame or under a broiler until the skin is blackened on all sides. Place the hot peppers in a bowl and cover tightly with plastic wrap for 10 minutes. Peel the skin off, remove the seeds and stems, and roughly chop the flesh.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, cumin, and oregano; cook for 1 minute until fragrant.
  3. Add the chopped roasted poblano peppers and chicken broth to the pot. Bring the mixture to a simmer.
  4. Use an immersion blender to blend the soup until mostly smooth, leaving some texture if desired. Alternatively, carefully transfer half the soup to a standard blender, blend until smooth, and return it to the pot.
  5. Stir in the shredded chicken and rinsed black beans. Simmer for 5 minutes to heat through.
  6. Reduce the heat to low. Stir in the heavy cream and cheese (if using). Heat gently until the cheese melts; do not boil after adding the cream.
  7. Season with salt and pepper to your taste. Serve hot, garnished with fresh cilantro.

Notes

  • This recipe is naturally gluten free if you skip the optional cheese.
  • For a tangier flavor, add 1 tablespoon of lime juice at the end.
  • If you do not have cooked chicken, you can poach 1 pound of chicken breast in the broth before starting step 3, then shred it.
