Make a flavorful and simple Chimichurri Steak Sheet Pan Dinner. You get tender flank steak roasted alongside your favorite vegetables, all coated in a bright, zesty homemade chimichurri sauce. This one-pan meal brings big taste with minimal cleanup.

Ingredients

Scale
  • 1.5 lbs Flank Steak
  • 1 lb Baby Potatoes, halved
  • 1 Red Bell Pepper, chopped
  • 1 Yellow Onion, cut into wedges
  • 2 tablespoons Olive Oil (for vegetables)
  • Salt and Pepper to taste
  • For the Chimichurri:
  • 1 cup fresh Parsley, packed
  • 1/2 cup fresh Cilantro, packed
  • 4 cloves Garlic
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Red Pepper Flakes
  • 1/2 teaspoon Salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the potatoes, bell pepper, and onion with 2 tablespoons of olive oil, salt, and pepper directly on a large sheet pan.
  3. Arrange the vegetables in a single layer on the pan.
  4. Roast the vegetables for 15 minutes while you prepare the chimichurri.
  5. While vegetables roast, make the chimichurri: Combine parsley, cilantro, garlic, red wine vinegar, oregano, and red pepper flakes in a food processor. Pulse until roughly chopped.
  6. Slowly drizzle in the 1/2 cup of olive oil while processing until the sauce is well combined but still slightly chunky. Stir in salt.
  7. Pat the flank steak dry and season generously with salt and pepper.
  8. Remove the sheet pan from the oven. Push the partially cooked vegetables to the sides, creating space in the center.
  9. Place the seasoned steak in the center of the sheet pan with the vegetables.
  10. Return the sheet pan to the oven and roast for another 12-18 minutes, depending on your desired steak doneness (125°F for rare, 140°F for medium).
  11. Remove the steak from the pan and let it rest on a cutting board for 5-10 minutes before slicing against the grain.
  12. Slice the steak. Serve the sliced steak and roasted vegetables drizzled generously with the fresh chimichurri sauce.

Notes

  • You can substitute the vegetables with broccoli florets or zucchini if you prefer.
  • Make extra chimichurri; it keeps well in the refrigerator for up to a week and is great on eggs or grilled chicken.
  • For easier cleanup, line your sheet pan with parchment paper before starting.
