Make quick, flavorful dry fried green beans at home. These blistered green beans are tossed in a punchy garlic soy sauce, perfect for a fast Chinese side dish.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 3 tablespoons neutral oil, like canola or vegetable
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon soy sauce (or tamari for gluten free)
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Wash and thoroughly dry the green beans. Moisture prevents the beans from blistering properly.
  2. Heat the neutral oil in a large wok or heavy skillet over high heat until shimmering.
  3. Add the green beans to the hot wok in a single layer if possible. Cook without stirring for 2 to 3 minutes to allow the beans to char slightly and blister.
  4. Toss the beans and continue cooking for another 3 to 5 minutes until they are tender-crisp and have visible charred spots.
  5. Push the beans to one side of the wok. Add the minced garlic and ginger to the empty space. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  6. Return the heat to medium-high. Add the soy sauce, sugar, and red pepper flakes (if using) to the wok. Toss everything quickly to coat the beans evenly with the sauce.
  7. Remove the wok from the heat and drizzle with sesame oil. Toss one final time and serve immediately as a vegan Chinese side.

Notes

  • For a deeper flavor, substitute 1 tablespoon of the neutral oil with chili oil.
  • If you do not have a wok, use the largest, heaviest skillet you own and cook the beans in batches to maintain high heat.
  • If you prefer a spicier dish, add 1/2 teaspoon of Sichuan peppercorns with the garlic and ginger.
  • Use tamari instead of soy sauce for a gluten-free version.
