Ingredients
Scale
1 cup glutinous rice flour
1/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 large egg
2 tablespoons unsalted butter, melted
Vegetable oil, for frying
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil
Sprinkles, for decorating
Instructions
In a large bowl, whisk together glutinous rice flour, sugar, baking powder, and salt.
In a separate bowl, whisk together milk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Lightly grease your hands and shape the dough into donut shapes.
Heat about 2 inches of vegetable oil in a deep pot or Dutch oven over medium heat to 350°F (175°C).
Carefully fry the donuts in batches for 2-3 minutes per side, until golden brown.
Remove donuts from the oil and place them on a wire rack to cool slightly.
While the donuts are cooling, melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
Dip each donut into the melted chocolate glaze, letting any excess drip off.
Immediately sprinkle with sprinkles before the chocolate sets.
Let the donuts set on a wire rack before serving.
Notes
Ensure the oil is at the correct temperature to prevent the donuts from absorbing too much oil.
