Ingredients

Scale
  • 1 cup whole milk, warmed to 105-115°F
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup granulated sugar, plus 1 teaspoon for yeast
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 4 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened and cut into pieces
  • 1 cup powdered sugar (for filling)
  • 1/2 cup unsweetened cocoa powder (for filling)
  • 1/2 cup (1 stick) unsalted butter, softened (for filling)
  • 4 ounces bittersweet chocolate, melted and cooled slightly (for filling)
  • 1/4 cup water (for syrup)
  • 1/2 cup granulated sugar (for syrup)

Instructions

  1. Activate the yeast: In a large bowl, combine the warm milk, 1 teaspoon sugar, and yeast. Let stand for 5-10 minutes until foamy.
  2. Mix the dough: Add the remaining sugar, eggs, vanilla, flour, and salt to the yeast mixture. Mix on low speed with a dough hook until combined.
  3. Incorporate butter: Gradually add the softened butter, one piece at a time, mixing until fully incorporated. Increase speed to medium-low and knead for 8-10 minutes until the dough is smooth and elastic.
  4. First rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1.5 to 2 hours, or until doubled in size.
  5. Prepare the filling: While the dough rises, beat together the powdered sugar, cocoa powder, 1/2 cup softened butter, and melted chocolate until smooth. Set aside.
  6. Prepare the syrup: In a small saucepan, combine the water and 1/2 cup sugar. Heat until the sugar dissolves completely. Remove from heat and set aside.
  7. Shape the dough: Punch down the risen dough. Turn it out onto a lightly floured surface. Roll the dough into a large rectangle, approximately 12×18 inches.
  8. Spread the filling: Spread the chocolate filling evenly over the entire surface of the dough, leaving a small border on one long edge.
  9. Roll and slice: Starting from the long edge opposite the border, tightly roll the dough into a log. Using a sharp knife or bench scraper, slice the log lengthwise down the center, exposing the layers.
  10. Braid: Turn the two halves cut-side up. Twist the two halves together, keeping the cut sides facing upward to expose the swirl pattern. Pinch the ends together.
  11. Bake: Carefully transfer the twisted dough to a greased 9×5 inch loaf pan. Cover loosely and let it rest for 30 minutes. Preheat your oven to 350°F (175°C). Bake for 35-45 minutes, or until golden brown and cooked through.
  12. Glaze: Immediately upon removing the babka from the oven, brush the entire top generously with the prepared sugar syrup. Let the babka cool in the pan for 15 minutes before carefully removing it to a wire rack to cool completely.

Notes

  • For the softest crumb, ensure your butter for the dough is truly soft, not melted.
  • If the dough is too sticky during rolling, chill it for 15 minutes before proceeding with the filling.
  • To achieve a very distinct swirl, chill the filled and rolled log for 10 minutes before slicing it in half for the braid.
