Ingredients
Scale
3 ripe bananas
10 ounces semi-sweet chocolate, chopped
2 tablespoons coconut oil (optional, for smoother dipping)
1/2 cup chopped nuts (peanuts, almonds, or pecans) OR shredded unsweetened coconut
6 wooden popsicle sticks
Instructions
Peel the bananas. Cut each banana in half crosswise.
Insert a wooden popsicle stick into the cut end of each banana half.
Place the banana pops on a parchment-lined baking sheet. Freeze for at least 2 hours, or until solid.
In a microwave-safe bowl, combine the chopped chocolate and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted.
Remove the frozen banana pops from the freezer.
Dip each frozen banana into the melted chocolate, turning to coat completely. Work quickly as the chocolate will set fast.
Immediately sprinkle the chocolate-covered portion with your choice of chopped nuts or shredded coconut.
Place the finished pops back onto the parchment-lined baking sheet.
Freeze for at least 30 minutes before serving. Store leftovers in an airtight container in the freezer.
Notes
Use slightly under-ripe bananas; they are firmer and easier to handle on a stick.
If you prefer a thicker chocolate coating, skip the coconut oil.
You can substitute the chocolate with white chocolate or dark chocolate based on your preference.
