Indulge in this rich and creamy Chocolate Espresso Pot de Crème, a decadent dessert perfect for any occasion. This custard dessert is infused with deep chocolate flavor and a hint of robust espresso.

Ingredients

Scale
  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 6 ounces bittersweet chocolate, finely chopped
  • 1 tablespoon instant espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C). Arrange six 4-ounce ramekins in a large baking dish.
  2. In a medium saucepan, combine the heavy cream, milk, sugar, and salt. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.
  3. In a separate bowl, whisk the egg yolks.
  4. Gradually temper the egg yolks by slowly whisking about 1/2 cup of the hot cream mixture into the yolks. Then, pour the tempered egg yolk mixture back into the saucepan with the remaining cream.
  5. Add the chopped bittersweet chocolate and instant espresso powder to the saucepan. Stir constantly over low heat until the chocolate is completely melted and the mixture is smooth.
  6. Stir in the vanilla extract.
  7. Pour the custard mixture evenly among the prepared ramekins.
  8. Carefully pour hot water into the baking dish around the ramekins, filling it about halfway up the sides of the ramekins.
  9. Bake for 30-35 minutes, or until the edges of the custard are set but the centers still jiggle slightly.
  10. Carefully remove the ramekins from the water bath and let them cool on a wire rack for about 1 hour.
  11. Cover the ramekins with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until firm.
  12. Serve chilled.

Notes

  • For an extra touch of elegance, garnish with a dollop of whipped cream or a dusting of cocoa powder before serving.
  • Ensure the chocolate is finely chopped for smooth melting.
  • Do not overbake the custards, as this can result in a grainy texture.
