Ingredients
Scale
1 cup chocolate protein powder
1/2 cup almond flour
1/4 cup strong brewed espresso, cooled
2 tablespoons unsweetened cocoa powder
1 tablespoon chia seeds
1 tablespoon maple syrup (optional, for extra sweetness)
Pinch of salt
Instructions
In a medium bowl, combine the chocolate protein powder, almond flour, cocoa powder, chia seeds, and salt. Mix well.
Pour in the cooled espresso and maple syrup, if using.
Stir the mixture until a thick dough forms. If the dough seems too dry, add espresso, one teaspoon at a time. If it is too wet, add a little more protein powder.
Roll the dough into small, bite-sized balls (about 1 inch in diameter).
Place the truffles on a parchment-lined plate or tray.
Refrigerate for at least 30 minutes to firm up before enjoying.
Notes
For a different flavor, try using vanilla protein powder and adding a dash of cinnamon.
If you prefer a richer chocolate flavor, roll the finished truffles in extra cocoa powder before serving.
Store leftovers in an airtight container in the refrigerator for up to one week.
