Ingredients
Scale
1 baguette, sliced into 1/2-inch thick rounds
2 tablespoons olive oil
8 ounces chorizo, casing removed
1/2 cup pitted dates, chopped
1/4 cup chopped fresh parsley
1 tablespoon balsamic glaze (optional)
Instructions
Preheat your oven to 375°F (190°C).
Arrange the baguette slices on a baking sheet. Brush both sides with olive oil.
Bake for 8-10 minutes, or until lightly golden and crisp.
While the crostini are baking, cook the chorizo in a skillet over medium heat, breaking it up with a spoon, until browned and cooked through. Drain off any excess fat.
Stir in the chopped dates and cook for 1-2 minutes until they soften slightly.
Remove the skillet from the heat and stir in the fresh parsley.
Spoon the chorizo and date mixture onto the toasted crostini.
Drizzle with balsamic glaze, if desired.
Serve immediately.
Notes
You can use a variety of dates, such as Medjool or Deglet Noor.
For a vegetarian option, omit the chorizo and use a plant-based sausage or a sprinkle of smoked paprika and a touch of maple syrup with the dates.
Balsamic glaze adds a nice sweet and tangy contrast.
