Ingredients
Scale
1 Large head of broccoli
1 Large head of cauliflower
2 Red bell peppers
1 Cucumber
1 pint Cherry tomatoes
1 pint Snow peas
1 bunch Asparagus
1 pint Black olives
1 small container Ranch dip or hummus
Instructions
Wash and prepare all vegetables. Cut the broccoli and cauliflower into small florets. Thinly slice the red bell peppers and cucumber.
Arrange the broccoli and cauliflower florets on a large platter or cutting board, shaping them into a Christmas tree. Start with a wider base and taper towards the top.
Use the red bell pepper slices to create ‘ornaments’ on the tree.
Fill in gaps and add more color with cherry tomatoes, snow peas, asparagus, and black olives.
Place a small bowl of ranch dip or hummus at the base of the tree as the ‘trunk’.
Serve immediately and enjoy!
Notes
Feel free to substitute vegetables based on your preferences and what’s in season.
Other good additions include carrots, celery sticks, or radishes.
For a star on top, use a piece of yellow bell pepper or a star-shaped cookie cutter.
