This Cinnamon Roll French Toast Bake is a crowd-pleasing breakfast casserole. It features layers of cinnamon-swirl bread soaked in a rich egg custard and baked until golden brown and delicious.

Ingredients

Scale
  • 1 (16 ounce) loaf cinnamon swirl bread, cut into 1-inch cubes
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange the bread cubes in an even layer in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, cinnamon, vanilla extract, and salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are coated. Press gently to help the bread absorb the custard.
  5. If using, sprinkle the chopped pecans over the top.
  6. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the bread to soak thoroughly.
  7. Preheat your oven to 350°F (175°C).
  8. Remove the plastic wrap and bake for 45-55 minutes, or until the French toast bake is puffed, golden brown, and a knife inserted into the center comes out clean.
  9. Let it cool slightly before serving. Dust with powdered sugar if desired.

Notes

  • For a richer flavor, use challah or brioche bread.
  • Adjust the amount of cinnamon to your preference.
  • If you don’t have time to refrigerate overnight, bake after soaking for at least 30 minutes.
