A hearty, traditional dish featuring seasoned ground meat topped with creamy mashed potatoes and baked until golden brown.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1.5 pounds ground beef or lamb
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 3 pounds Russet potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Add the ground meat to the skillet. Cook, breaking it up with a spoon, until browned. Drain off excess fat.
  4. Sprinkle flour over the meat mixture and stir for one minute.
  5. Pour in the beef broth. Stir in thyme, salt, and pepper. Bring to a simmer and cook until the sauce thickens slightly, about 5 minutes.
  6. Stir in the frozen peas and corn. Remove the skillet from the heat.
  7. While the meat cooks, boil the potatoes until tender. Drain well. Mash the potatoes with milk and butter until smooth. Season with salt and pepper.
  8. Spoon the mashed potatoes evenly over the meat mixture in the skillet. Use a fork to create texture on top.
  9. If using, sprinkle cheddar cheese over the potatoes.
  10. Bake for 20 to 25 minutes, or until the topping is golden brown and the filling is bubbling. Let stand for 10 minutes before serving.

Notes

  • You can substitute ground lamb for a traditional Shepherd’s Pie, or ground beef for Cottage Pie.
  • For extra flavor, add 1 tablespoon of Worcestershire sauce to the meat mixture.
  • If your skillet is not oven-safe, transfer the filling to a 9×13 inch baking dish before topping with potatoes.
