A recipe for a traditional baked egg custard pie featuring a silky smooth filling and a light nutmeg topping.

Ingredients

Scale
  • 1 (9 inch) unbaked pie crust
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 2 cups whole milk

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Place the unbaked pie crust in a 9-inch pie plate.
  2. In a medium bowl, whisk the eggs lightly.
  3. Add the sugar, salt, vanilla extract, and nutmeg to the eggs. Whisk until just combined.
  4. Slowly whisk in the whole milk until the mixture is smooth. Do not over-beat the mixture.
  5. Pour the custard mixture carefully into the unbaked pie crust.
  6. Bake for 40 to 45 minutes, or until a knife inserted near the center comes out clean. The center may still jiggle slightly.
  7. Cool the pie completely on a wire rack before slicing. Serve chilled or at room temperature.

Notes

  • For a flakier crust, chill the prepared pie shell in the freezer for 15 minutes before pouring in the filling.
  • If the crust edges start to brown too quickly during baking, cover them loosely with aluminum foil strips.
  • You can substitute 1/2 teaspoon of cinnamon for the nutmeg if you prefer that flavor.
