Create a beautiful, classic French Tarte Tatin with perfectly caramelized apples. This elegant dessert offers a warm, sweet finish to any chilly evening.

Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 6 to 8 firm, tart apples (like Granny Smith), peeled, cored, and halved
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a 9-inch oven-safe skillet (preferably cast iron), scatter the sugar evenly over the bottom.
  3. Place the skillet over medium heat. Do not stir. Allow the sugar to melt and caramelize until it turns a deep amber color. This takes patience.
  4. Once caramelized, remove the skillet from the heat. Carefully place the butter pieces evenly over the caramelized sugar.
  5. Arrange the apple halves tightly, cut-side down, in a circular pattern over the butter and sugar. Pack them in snugly; they will shrink when cooked.
  6. Place the skillet back on medium heat for about 5 to 7 minutes, allowing the apples to soften slightly and absorb some caramel.
  7. Remove the skillet from the heat again. Lay the thawed puff pastry sheet over the apples, tucking the edges down around the apples inside the pan.
  8. Bake for 25 to 30 minutes, or until the pastry is golden brown and puffed.
  9. Let the tart cool in the skillet for only 5 to 10 minutes. This brief cooling period is important.
  10. Place a serving plate upside down over the skillet. Holding both firmly, quickly invert the skillet and plate together to release the tart.
  11. Serve warm.

Notes

  • Use firm apples that hold their shape well during cooking.
  • Watch the caramel closely; it burns fast once it starts to color.
  • Invert the tart while it is still warm, not piping hot, to prevent the caramel from seizing.
