Make the classic Italian Bellini cocktail using fresh peach puree and Prosecco. This recipe includes instructions for a simple 3-ingredient version and a frozen variation.

Ingredients

Scale
  • 1/2 cup fresh white peach puree
  • 3 ounces chilled Prosecco or dry sparkling wine
  • 1 teaspoon peach liqueur (optional)

Instructions

  1. Chill your Prosecco thoroughly before starting.
  2. If using fresh peaches, peel, pit, and blend them until smooth to create the puree. Strain the puree for a smoother texture if desired.
  3. For the classic version, pour 1/2 cup of peach puree into a chilled champagne flute.
  4. Slowly top the puree with 3 ounces of chilled Prosecco.
  5. Gently stir once to combine the ingredients without losing too much carbonation.
  6. If you want a slightly sweeter drink, add 1 teaspoon of peach liqueur before adding the Prosecco.
  7. For a frozen Bellini, blend the peach puree with 1/2 cup of ice until smooth, pour into a glass, and top with Prosecco.

Notes

  • Use high-quality, ripe white peaches for the best flavor in your puree.
  • If fresh peaches are unavailable, use high-quality canned white peach halves, drained well, or store-bought peach nectar.
  • Chill your glassware in the freezer for 10 minutes before serving for an extra cold drink.
  • For a Strawberry Bellini variation, substitute the peach puree with fresh strawberry puree.
