Ingredients
Scale
2 cups shredded sweetened coconut
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
Pinch of salt
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until everything is well combined and the coconut is evenly moistened.
Drop rounded tablespoons of the mixture onto the prepared baking sheet. You can shape them slightly with your fingers if you like.
Bake for 12-15 minutes, or until the edges are golden brown and the tops are lightly toasted.
Let the macaroons cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, you can add a bit of lemon zest or a pinch of cinnamon to the mixture.
If you prefer unsweetened coconut, you’ll need to adjust the sweetness, perhaps by adding a bit more condensed milk or a touch of sugar.
These macaroons are delicious on their own, or you can dip their bottoms in melted chocolate for an extra treat.
