A detailed recipe to replicate the famous soft, thick, and chewy bakery-style sugar cookie topped with signature almond-flavored pink frosting.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup shortening
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1 teaspoon almond extract (for frosting)
  • 1/4 teaspoon vanilla extract (for frosting)
  • Pink gel food coloring (for frosting)

Instructions

  1. In a large bowl, cream together the softened butter, shortening, and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  4. Wrap the dough tightly in plastic wrap and chill in the refrigerator for at least 2 hours, or up to 24 hours. This chilling step is crucial for texture.
  5. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Scoop the chilled dough using a large ice cream scoop (about 1/3 cup per cookie) and place them 3 inches apart on the prepared sheets. You do not need to flatten them.
  7. Bake for 11 to 14 minutes. The edges should be set, but the centers should still look slightly underbaked and puffy.
  8. Remove from the oven and let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
  9. To make the frosting, beat the powdered sugar, milk, almond extract, and vanilla extract together until smooth. Add pink gel coloring gradually until you reach the desired color.
  10. Once cookies are completely cool, spread a thick layer of pink frosting over the top of each cookie.

Notes

  • For the thickest cookie, use a large cookie scoop and avoid pressing the dough down before baking.
  • If the dough becomes too soft while scooping, return the dough bowl to the refrigerator for 15 minutes.
  • Use gel food coloring instead of liquid coloring to prevent thinning the frosting.
