Ingredients
Scale
1 pound ground pork
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon ground sage
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
4 English muffins
4 slices American cheese
4 large eggs
1 tablespoon butter or oil for cooking eggs
Instructions
Mix the ground pork with salt, pepper, sage, thyme, nutmeg, allspice, garlic powder, and onion powder in a bowl. Mix gently until just combined.
Divide the sausage mixture into 4 equal portions. Shape each portion into a thin patty slightly larger than the English muffin, as they will shrink during cooking.
Cook the sausage patties in a skillet over medium heat for about 3 to 4 minutes per side, until fully cooked. Remove and keep warm.
Prepare the eggs using a round mold (like a ring mold or biscuit cutter) placed in a lightly oiled non-stick skillet over medium-low heat. Crack one egg into each mold. Cook until the whites are set and the yolk reaches your desired doneness, about 2 to 3 minutes for a slightly runny yolk.
While the eggs cook, lightly toast the English muffins.
Place one slice of American cheese on top of each hot sausage patty immediately after cooking so it begins to melt.
Place one cooked egg on top of the cheese on each bottom muffin half.
Top with the corresponding muffin top. Serve immediately for the best flavor replication.
Notes
For perfectly round eggs, use a metal ring mold placed in the pan. Spray the inside of the mold with cooking spray before adding the egg.
If you do not have molds, you can cook the eggs in a small amount of water (steamed) or gently cook them in a small, well-oiled pan, folding the edges slightly to keep them compact.
The specific seasoning blend is key to replicating the authentic sausage flavor. Do not skip the sage and nutmeg.
